Grilled eggplant with yogurt - Pure Lifestyle Experience

Eggplant is low in calories because it contains more than 90% water on average.

The eggplant and especially the water meet the nutritional requirements for an effective diet and for weight loss. In addition, eggplant is easy to prepare.

You can bring this grilled eggplant with yogurt to the table in less than 10 minutes and it simply tastes delicious.

Ingredients:

1 eggplant

1 avocado

1 lime (also with lemon)

1 jar of natural yogurt

Olive oil

Pepper

salt

Cumin

Oregano

Cayenne pepper

Some mint leaves

Preparation:

Cut the eggplant into nice slices about 1 cm thick.

Put the pan on the stove with a little oil so that she has time to get very hot

Meanwhile, spread some oil, pepper, salt and cumin on a piece of aluminum foil and put the slices of eggplant on top. Then do the same on top of the eggplant slices and sprinkle with salt, pepper, cumin and oil. Fold up the aluminum foil and make sure everything is closed.

Place the aluminum foil in the very warm pan and cook for 5 minutes.

Meanwhile we prepare the sauce.

Open your jar of yogurt. Add some oregano, 2 tablespoons of olive oil, some lime juice and a pinch of cumin. Cut the avocado meat into small pieces and add to the yogurt. Close the jar and shake well. Check the taste, season if necessary and the sauce is ready.

Now remove your pan from the heat and open the aluminum foil. The eggplant will be nicely browned and have a wonderful scent.

 

Dress the eggplant slices on a plate and place a little sauce on each. Finish with some mint leaves and a little cayenne pepper.

In a few minutes you have a delicious dish on the table.

If, like us, you don’t like to use aluminum foil, you can simply use a plate to season and oil your eggplant. The total cooking time will therefore be slightly longer, but the final result will remain the same.
